"Consumers are starting to look at game in a very different way" explains Deborah. "It is a very healthy meat, low in fat and cholesterol and can be easily incorporated into the weekly shop because it is now more readily available. It can be bought seasonally then frozen to be enjoyed all year round. Indeed many chefs are increasingly cooking up some fantastic dishes using the wonderful variety of British game to capitalize on the very distinctive flavours."

September is the start of the partridge and duck season, closely followed by pheasants in October that go right through to the end of January. Venison is available throughout most of the year.
